Inventor of vacuum-cooked chestnuts in their natural state, backed by 35 years of experience,
Ponthier is today recognized as a market leader in terms of quality by the most reputable companies
chefs and the public. Ponthier decided to work with chestnuts
with a PDO (protected designation of origin) from the Ard?che to produce their purée -
a symbol of the traditional knowledge of French chestnut growers.
For chestnuts, the traditional Ard?che varieties are used with

The fruit derived from the identified chestnuts is prohibited by any
fertilization or chemical additives. With over 40 years of chestnut cooking experience, Ponthier
perfectly masters shelling, flame and vacuum cooking to obtain a soft and delicious flesh with slightly sweet
and roasted notes. In this way, the Ponthier purée perfectly reproduces the typical aromas
