 Star anise is the unusual fruit of a small oriental tree. It is, as the name suggests, star shaped. This beautiful spice is native to China and has been used since antiquity because of its medicinal virtues. In use since the Middle-Ages, Marco Polo was the first to bring it from Asia but kept its origin secret for a long time as the fruit was selling too well at very high prices. Until the XVII century, this spice was rare in Europe.


The star anise pod contains a brown, shiny seed which has an aniseed, liquorice and slightly peppery taste. The pod is the tastiest part of the fruit and is famous for being an important ingredient in pastis.


Usage
Star anise is generally used ground or infused. In pastry, it gives taste to cakes or biscuits. It also helps digestion and therefore is used for aperitif, brandy or dessert.
The seeds can also be used to flavor curry, fruit compote and Indian pastries.
